Grilled Pork Jowl

Ingredients:

  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon sugar
  • 2 cloves garlic, minced
  • 1 tablespoon lemongrass, finely chopped (optional)
  • 1 tablespoon vegetable oil
  • Freshly ground black pepper to taste

For dipping sauce:

  • 2 tablespoons fish sauce
  • 2 tablespoons lime juice
  • 1 tablespoon sugar
  • 1 clove garlic, minced
  • 1 tablespoon chopped fresh cilantro

Steps:

  1. Clean the pork jowl by rinsing it under cold water, then pat dry with paper towels.
  2. In a bowl, mix the soy sauce, oyster sauce, fish sauce, sugar, minced garlic, lemongrass (if using), vegetable oil, and black pepper to make the marinade.
  3. Place the pork jowl in a large resealable plastic bag or a shallow dish. Pour the marinade over the pork, making sure each piece is well coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 2 hours, preferably overnight for the best flavor.
  4. Preheat your grill to medium-high heat.
  5. Remove the pork jowl from the marinade, allowing any excess marinade to drip off.
  6. Grill the pork jowl for about 5-7 minutes on each side, or until the meat is cooked through and has a nice char.
  7. While the pork is grilling, prepare the dipping sauce by mixing the fish sauce, lime juice, sugar, minced garlic, and chopped cilantro in a small bowl.
  8. Once the pork jowl is cooked, remove it from the grill and let it rest for a few minutes before slicing.
  9. Slice the pork jowl into thin pieces and serve with the dipping sauce on the side.
