Pork Femur Bone Soup

Ingredients:

  • Pork Femur Bone Cut
  • 8 cups water
  • 2 slices ginger
  • 2 cloves garlic, smashed
  • 2 scallions, cut into 2-inch pieces
  • 1 daikon radish, peeled and cut into chunks (optional)
  • 2 carrots, peeled and cut into chunks (optional)
  • 1/2 cup goji berries (optional)
  • Salt to taste
  • White pepper to taste
  • Fresh cilantro or scallions for garnish

Steps:

  1. Clean the pork femur bones by rinsing them under cold water. Blanch the bones in boiling water for 5 minutes to remove impurities. Drain and rinse the bones under cold water again.
  2. In a large pot, add the blanched pork femur bones and 8 cups of water. Bring to a boil over high heat.
  3. Once the water is boiling, reduce the heat to low. Skim off any foam or impurities that rise to the surface.
  4. Add the ginger, garlic, and scallions to the pot. Cover and simmer on low heat for at least 2 hours. For a richer flavor, you can simmer for up to 4 hours.
  5. If using, add the daikon radish and carrots to the pot and continue to simmer for an additional 30 minutes, or until the vegetables are tender.
  6. If using, add the goji berries during the last 10 minutes of cooking.
  7. Season the soup with salt and white pepper to taste.
  8. Remove the bones and any large pieces of ginger, garlic, or scallions from the pot.
  9. Ladle the soup into bowls and garnish with fresh cilantro or scallions.
