Sour Soup with Pork Rolls

Ingredients:

  • Pork Neck Bone
  • 4 cups chicken broth
  • 2 tomatoes, chopped
  • 1/2 cup pickled mustard greens, chopped
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 2 tablespoons Chinese black vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce (optional)
  • 1 tablespoon sugar
  • 1/2 teaspoon white pepper
  • Juice of 1 lime (or to taste)
  • Fresh cilantro, chopped for garnish
  • Cooked noodles or rice (optional, for serving)

Steps:

  1. Heat the vegetable oil in a large pot over medium heat. Add the minced garlic and ginger. Saute until fragrant.
  2. Add the chopped tomatoes and cook until they begin to break down and form a sauce.
  3. Add the chopped pickled mustard greens and stir to combine.
  4. Pour in the chicken broth and bring to a boil.
  5. Add the Chinese black vinegar, soy sauce, fish sauce (if using), sugar, and white pepper. Stir to combine.
  6. Reduce the heat to low and let the soup simmer for about 10 minutes to allow the flavors to meld.
  7. Add the pork rolls to the pot. Cook for just a few minutes until the pork is just cooked through. Be careful not to overcook the pork.
  8. Add the lime juice and adjust the seasoning with more vinegar, soy sauce, or lime juice to taste.
  9. Ladle the soup into bowls and garnish with fresh cilantro.
  10. Serve hot with cooked noodles or rice, if desired.
