Sweet and Sour Spare Ribs
Ingredients:
- RWA Pork Slide Rib Chop
- 1 tablespoon soy sauce
- 1 tablespoon Shaoxing wine (Chinese cooking wine) or dry sherry
- 2 tablespoons cornstarch
- 2 tablespoons vegetable oil
- 3 tablespoons sugar
- 2 tablespoons black vinegar or rice vinegar
- 1 tablespoon soy sauce
- 1 tablespoon ketchup (optional, for color)
- 1/2 cup water
- 1 teaspoon sesame oil (optional)
- 2-3 scallions, chopped for garnish
- Sesame seeds for garnish (optional)
Steps:
- Clean the pork slide ribs by rinsing them under cold water, then pat dry with paper towels.
- In a bowl, mix the pork ribs with 1 tablespoon soy sauce, Shaoxing wine, and cornstarch. Let it marinate for at least 15 minutes.
- Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the marinated ribs and brown them on all sides.
- Once the ribs are browned, add the sugar directly to the skillet and let it caramelize, stirring constantly.
- Add the black vinegar (or rice vinegar), 1 tablespoon soy sauce, ketchup (if using), and water to the skillet. Stir to combine and bring to a boil.
- Reduce the heat to medium-low and cover the skillet. Let the ribs simmer for about 20-30 minutes, or until they are tender and the sauce has thickened. Stir occasionally to prevent sticking and ensure even cooking.
- If the sauce is too thick, you can add a little more water. If it’s too thin, let it cook uncovered for a few more minutes to reduce.
- Drizzle with sesame oil if using, and stir to coat the ribs evenly.
- Transfer the ribs to a serving dish and garnish with chopped scallions and sesame seeds.
