Sour Soup with Pork Rolls
Ingredients:
- Pork Neck Bone
- 4 cups chicken broth
- 2 tomatoes, chopped
- 1/2 cup pickled mustard greens, chopped
- 1 tablespoon vegetable oil
- 2 cloves garlic, minced
- 1-inch piece ginger, minced
- 2 tablespoons Chinese black vinegar
- 1 tablespoon soy sauce
- 1 tablespoon fish sauce (optional)
- 1 tablespoon sugar
- 1/2 teaspoon white pepper
- Juice of 1 lime (or to taste)
- Fresh cilantro, chopped for garnish
- Cooked noodles or rice (optional, for serving)
Steps:
- Heat the vegetable oil in a large pot over medium heat. Add the minced garlic and ginger. Saute until fragrant.
- Add the chopped tomatoes and cook until they begin to break down and form a sauce.
- Add the chopped pickled mustard greens and stir to combine.
- Pour in the chicken broth and bring to a boil.
- Add the Chinese black vinegar, soy sauce, fish sauce (if using), sugar, and white pepper. Stir to combine.
- Reduce the heat to low and let the soup simmer for about 10 minutes to allow the flavors to meld.
- Add the pork rolls to the pot. Cook for just a few minutes until the pork is just cooked through. Be careful not to overcook the pork.
- Add the lime juice and adjust the seasoning with more vinegar, soy sauce, or lime juice to taste.
- Ladle the soup into bowls and garnish with fresh cilantro.
- Serve hot with cooked noodles or rice, if desired.
