配料:
- Pork Neck Bone
- 8 cups water
- 2 slices ginger
- 2 cloves garlic, smashed
- 2 scallions, cut into 2-inch pieces
- 1 large lotus root, peeled and sliced into 1/4-inch thick rounds
- 2-3 dried dates (optional, for sweetness)
- 1/2 cup goji berries (optional)
- Salt to taste
- White pepper to taste
- Fresh cilantro or scallions for garnish
步骤:
- Clean the pork neck bones by rinsing them under cold water. Blanch the bones in boiling water for 5 minutes to remove impurities. Drain and rinse the bones under cold water again.
- In a large pot, add the blanched pork neck bones and 8 cups of water. Bring to a boil over high heat.
- Once the water is boiling, reduce the heat to low. Skim off any foam or impurities that rise to the surface.
- Add the ginger, garlic, and scallions to the pot. Cover and simmer on low heat for at least 1.5 to 2 hours.
- Add the sliced lotus root and dried dates (if using) to the pot. Continue to simmer for another 30-45 minutes, or until the lotus root is tender but still slightly crunchy.
- If using, add the goji berries during the last 10 minutes of cooking.
- Season the soup with salt and white pepper to taste.
- Remove the bones and any large pieces of ginger, garlic, or scallions from the pot.
- Ladle the soup into bowls and garnish with fresh cilantro or scallions.
