Sweet and Sour Spare Ribs

配料:

  • RWA Pork Slide Rib Chop
  • 1汤匙生抽
  • 1 tablespoon Shaoxing wine (Chinese cooking wine) or dry sherry
  • 2 tablespoons cornstarch
  • 2 tablespoons vegetable oil
  • 3 tablespoons sugar
  • 2 tablespoons black vinegar or rice vinegar
  • 1汤匙生抽
  • 1 tablespoon ketchup (optional, for color)
  • 1/2 cup water
  • 1 teaspoon sesame oil (optional)
  • 2-3 scallions, chopped for garnish
  • Sesame seeds for garnish (optional)

步骤:

  1. Clean the pork slide ribs by rinsing them under cold water, then pat dry with paper towels.
  2. In a bowl, mix the pork ribs with 1 tablespoon soy sauce, Shaoxing wine, and cornstarch. Let it marinate for at least 15 minutes.
  3. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the marinated ribs and brown them on all sides.
  4. Once the ribs are browned, add the sugar directly to the skillet and let it caramelize, stirring constantly.
  5. Add the black vinegar (or rice vinegar), 1 tablespoon soy sauce, ketchup (if using), and water to the skillet. Stir to combine and bring to a boil.
  6. Reduce the heat to medium-low and cover the skillet. Let the ribs simmer for about 20-30 minutes, or until they are tender and the sauce has thickened. Stir occasionally to prevent sticking and ensure even cooking.
  7. If the sauce is too thick, you can add a little more water. If it’s too thin, let it cook uncovered for a few more minutes to reduce.
  8. Drizzle with sesame oil if using, and stir to coat the ribs evenly.
  9. Transfer the ribs to a serving dish and garnish with chopped scallions and sesame seeds.
