配料:

  • Pork Neck Bone
  • 8 cups water
  • 2 slices ginger
  • 2 cloves garlic, smashed
  • 2 scallions, cut into 2-inch pieces
  • 1 large lotus root, peeled and sliced into 1/4-inch thick rounds
  • 2-3 dried dates (optional, for sweetness)
  • 1/2 cup goji berries (optional)
  • Salt to taste
  • White pepper to taste
  • Fresh cilantro or scallions for garnish

步骤:

  1. Clean the pork neck bones by rinsing them under cold water. Blanch the bones in boiling water for 5 minutes to remove impurities. Drain and rinse the bones under cold water again.
  2. In a large pot, add the blanched pork neck bones and 8 cups of water. Bring to a boil over high heat.
  3. Once the water is boiling, reduce the heat to low. Skim off any foam or impurities that rise to the surface.
  4. Add the ginger, garlic, and scallions to the pot. Cover and simmer on low heat for at least 1.5 to 2 hours.
  5. Add the sliced lotus root and dried dates (if using) to the pot. Continue to simmer for another 30-45 minutes, or until the lotus root is tender but still slightly crunchy.
  6. If using, add the goji berries during the last 10 minutes of cooking.
  7. Season the soup with salt and white pepper to taste.
  8. Remove the bones and any large pieces of ginger, garlic, or scallions from the pot.
  9. Ladle the soup into bowls and garnish with fresh cilantro or scallions.
